Fast Food


In between the two parts of last night's photo shoot, I scooted home to grab some dinner/make lunch for today. Earlier in the week, I'd picked up a bunch of veg and meat with the plan to do some stir fries. Well, I finally got around to it last night.


Of course, the most time consuming part of any stir fry is the chopping. Sigh. So, I put about half the packet of chicken breast fillets, cubed, into about ¼ C of a bottled teriyaki ginger marinade. Then, I set about slicing or chopping 4 large mushrooms, half a red pepper, ¼ of an onion, 1 head of chinese lettuce, and 1 stalk of broccoli (into florets). I also "deveined" a handful of snow peas.


I threw in the onions, pepper, and broccoli first, along with two cubes of Toppits ginger and cooked in a very hot, oiled pan for about a minute. Then I added the chicken and let that brown - a minute or two. Lastly, I added the mushrooms and lettuce and let the whole thing cook, stirring frequently, until the mushrooms released their juices and the lettuce was wilted. To finish it, I drizzled with about 1 Tbsp of soya sauce.


The veg retained just the perfect amount of crunch and colour, if I do say so myself. So simple, yet so satisfyingly delicious.
