Fish Season(ing)
In between the free food I've been partaking in this week, I also whipped up this dish with the few items I bought at the grocery store the other day.
I marinated an orange roughy fillet in some salsa and vegetable broth overnight. Then I cooked it in a cast iron pan in a 350°F oven for 30 minutes. While that was cooking, I reduced the marinating liquid until thick. I served it with some leftover spanish style rice.
I've never cooked with this particular fish before, but would definitely use it again. It's a soft-textured, flaky white fish, that absorbed the flavour of the marinade really well.
