Summer Eats: Cool and Easy


Yes, Virginia. Even I, tropical flower that I am, sometimes feel too hot to eat, much less cook. That's when a simple supper like this is perfect. Super simple, sweet, savoury and satisfying. You could really put whatever you like in it, but the base must be watermelon and mint. It's what makes it so peerlessly refreshing.

Tonight's version also had feta cheese and kalamata olives. But any combination of fresh peas, haloumi, cherry tomatoes, peaches, mozzarella, asparagus, leeks, etc., etc., would work just as well. The only limit is your imagination.
