Take A Stroll Down My Portobello Road

To paraphrase Lord Tennyson, in the spring this young woman's fancy lightly turns to thoughts of veggies. I love this country, truly I do, but the dearth of variety in fresh produce for half the year just about kills me sometimes.

Tonight I wandered into my neighbourhood grocery with no specific plan in mind, but knowing I wanted to make something light for dinner. As I spied the big, meaty portobello mushrooms, a plan started to take shape. I grabbed some garlic, fresh rosemary and soft goat cheese and I was set. Considering I completely winged it, the dish turned out pretty damn delicious and satisfying.

All I did was lightly oil the mushrooms, topped them with slivers of garlic (most easily accomplished with a mandoline) and speared them with a couple of sprigs of rosemary cut down to size. I topped them with little knobs of butter and then roasted for 20 minutes at 375°F. To finish, I added knobs of the goat cheese and grilled them until lightly browned. That's it! Salt and pepper could be added to your taste.
