Three S's

As I said yesterday, the variety and freshness of produce available at this time of year is one of my favourite things about summer. I'm never more inspired than when walking through a market. The colours, shapes and textures on display are so much eye candy that my mind can't help but come up with ways to combine them all. Last week's feature salad highlighted spinach, strawberries and salmon.




On a bed of baby spinach leaves, I added sliced organic strawberries, torn pieces of smoked salmon, bits of goat's milk camembert, halved grape tomatoes and dressed it all with pomegranate balsamic dressing.


Sharp, sweet, earthy, salty, crisp and juicy. In the waning days of summer, we're finally experiencing some heat and this made the perfect lunch for a sultry afternoon.
