Spicy Eggs

I woke up pretty late this Good Friday after a night out of dancing to the music of Osunlade. (I do love long weekends... ) So, this was more brunch than breakfast. I also haven't been to the grocery store in a while, so the fridge was looking a little bare. Luckily, I still had eggs, cream, salsa and a bit of goat cheese.

In a bowl, I beat together 2 eggs, 1Tbsp cream, 2 Tbsp medium salsa, and 1 Tbsp goat cheese. Pour the mixture into a preheated pan, on medium, and scramble away.

The eggs turned out really creamy and the salsa flavour really came through without overpowering the dish. I really enjoyed the chunks of vegetables throughout too.
