It may not look pretty, but I assure you, this dish was crazy delicious! Although it took a bit of time to cook, the results were well worth the wait. Besides, the prep was virtually nil.
ROASTED CHICKEN & VEGETABLES
- ½ red pepper, cut into large pieces
- 6-8 cremini mushrooms, halved (I only had sliced mushrooms last night, so they ended up a bit overdone)
- 1 c. diced canned tomatoes
- 1 potato, medium cubed
- ½ onion, cut into medium size chunks
- 3 cloves garlic, smashed
Put all ingredients into a roasting pan or cast iron skillet. Drizzle with olive oil. Season with salt and pepper. Roast at 350°F for 45 minutes to an hour, stirring occasionally. You may need to add some water to the pan closer to the finish time to deglaze the pan.
