I used to be afraid of fruit with meat. For reals. Mango changed all that. It DOES go well with the chicken.
So for this dish, I improvised. (As much as I love reading cookbooks, I tend to take them more as guidelines than anything else.) So, while I don't have a recipe per se, I'll try to give you a rough sketch.
I diced up some onion, slightly underripe mango and red pepper. Then I thinly sliced a small knuckle of ginger and a couple of mushrooms. The chicken (about 6-8 fillets), I cut up into cubes. Then I put sticky rice on and cooked according to the package instructions.
Sautee the onions until slightly tender, then add the ginger and pepper. Cook for 3-4 minutes. Then add the mango and cook about 5 minutes. Add the chicken and increase the heat to med-high. Once the chicken gets some colour, add a few dashes of soy sauce, a sprinkling of sugar, a few grinds of PC brand Thai spice blend (or equivalent) and a bit of water to make a sauce. Reduce the heat and cook for another 10 minutes or so. In the last minute, add the basil. Eat with the rice. Yummmmm...
